Thinning and Maturation

Vineyards destined to the production of Aglianico DOC Sannio are subject to green harvesting during veraison, in percentages ranging from 30% to 40% according to the characteristics of the vintage.

Vinification Technique

The grapes, harvested in the second decade of October, undergo a soft destemming and crushing, followed by alcoholic fermentation in stainless steel tanks at a controlled temperature, ranging between 25 and 28 ° C, able to extract the noble compounds of the skin with the help of periodic pumping over. Maceration on skins lasts from 15 to 18 days.

Refinement

refining is done entirely in stainless steel tanks. Regular racking operations contribute to the aromatic and gustatory evolution of the product. After some months of aging in bottle, the wine begins to express the characteristics of pleasantness and drinkability of young Aglianico.

Longevity

Despite the fact grapes are produced in order to best express the fruity and fresh characteristics found in the wine, Aglianico Sannio DOC benefits from a certain period of aging in bottle which certainly improves its complexity and the nuances of the grape. Although of young spirit, it has a long lasting future.

Organoleptic characteristics

Deep ruby red color; intense and strong aromas, from the typical spicy notes to the fruity ones, with soft but lively tannins. Wine with character, medium structured, very harmonic.

Gastronomic pairings

Aglianico Sannio DOC is a product which perfectly matches with first and second courses of Campania's cuisine in particular, rich in flavor and moderately demanding. Moreover it goes very well with salty cheese, of medium seasoning, and with typical cold cuts of Campania's countryside.
